Mum shares a ‘healthy’ menu that lets you eat three meals for a total of £1 a day

THE cost of living crisis means many people are trying to cut back on their food spending.

And there are many Facebook groups dedicated to showing people how to eat healthily on a tight budget.

In one such group, a woman shared how she prepared three ‘healthy’ meals a day for less than £1, but many people said the same thing.

The mum shared her daily menu and how much it all cost her for the day. She wrote: “Day 111 – eat healthy for 1lb a day (try it!)”

“Breakfast: last cornflakes! (without olio), milk (6p), sweetener (9p). 15p.”

For lunch, the mum went for toasted cheese and tomato sandwiches and lemon tart, which she bought at a reduced price of 37p.

The mother uses the Olio app, which aims to prevent food waste by bringing local people together to give away surplus groceries that are out of date.

She whipped up a potato curry for four for dinner, which cost her 32p for four servings.

Here, too, mum got many ingredients for free from Olio, including some naan bread as a side dish.

To end the day, the family treated themselves to a dessert of toasted pancakes (from Olio), golden syrup and chocolate pudding, which cost them 41p.

In total, she only spent £1.01 on food that day.

Some people commented that it wasn’t healthy – but also recognized that affording fresh fruit and vegetables was a struggle for many.

One wrote: “It’s good for a temporary fix but not healthy at all in the long run… but that’s the situation people are being forced into.”

“I don’t want to take away your ingenuity, but no one should be in a position where they can’t support themselves with a variety of fresh foods,” commented another.

But many people praised the mother for supporting her family on such a tight budget.

One commented, “Well done you did a brilliant job on a low budget.”

“Don’t get the issue here yeah ok there’s probably a lot more than I would eat but you got some veggies in there and a decent meal,” added another.

A third wrote: “Well done! Full bellies are better than empty ones.”
