Air-fryer teriyaki salmon salad

Serves 4


4 x 200 g boneless salmon fillets, pores and skin on

2 child cos lettuces, halved lengthways and leaves separated

250 g cherry tomatoes, halved

½ Lebanese cucumber, halved lengthways, deseeded and sliced

½ crimson onion, finely sliced

2 tablespoons extra-virgin olive oil 1 teaspoon lemon juice

sliced spring onion, to serve (non-compulsory)

Teriyaki Sauce

2 ½ tbsp salt-reduced soy sauce

1½ tbsp candy sherry

1 tbsp brown sugar

3 cm piece of ginger, finely grated

1 tsp maple syrup


1. To make the teriyaki sauce, mix the elements in a small bowl and stir till the sugar is dissolved.

2. Place the salmon in a shallow dish and pour the teriyaki sauce excessive, ensuring the salmon is evenly coated. Let the salmon relaxation and take up the sauce by protecting and refrigerate for 1 hour.

3. Permit the salmon to come back to room temperature.

4. Line the bottom of your air fryer with baking paper and place the salmon on high (this may permit it to proceed absorbing the marinade whereas it cooks, and the maple syrup and sugar within the sauce will caramelise fantastically).
