Batch Lady’s recipe for Balmoral Pie is comfort food made easy

THIS week I have two easy weekday meals for you.
Both are one pan recipes which I love.

They’re brilliant for those evenings in the freezer when you’re rushing to get a meal on the table after the school run.
All you have to do if you want it is thaw and cook the bag.
Such a time saver.
Balmoral Pie (serves 4)
Preparation time: 10 mins
Cooking time: 20 minutes
YOU NEED:
- 8 sausages
- 2 x 400g cans of baked beans
- 2 x 425g packs of ready-to-eat porridge
- 70 g cheese, grated
METHOD:
Preheat oven to 180°C/160°C fan/gas mark 4.
Cook the sausages on a baking sheet in the oven according to package directions, then allow to cool.
Once cool, cut into 1-inch pieces and place in the bottom of a freezer-safe bowl.
Pour cold beans over the two cans.
Crumble cold mush over beans to form a cake topping and sprinkle over grated cheese.
Ready to freeze: Seal, label and freeze the dish.
Ready to eat: Defrost overnight and bake in the oven at 180°C/160°C fan/gas mark 4 for approx. 20 mins.
